Eggs Have Significant Health Problems
Eating Eggs can Raise Risk for Type 2 Diabetes
Recent research confirms earlier studies that eating a lot of eggs can increase the risk for type 2 diabetes. The study that was published July 14, 2021 in the British Journal of Nutrition showed that eating one or more eggs a day could increase the risk for developing type 2 diabetes by 60%.
Eggs can Increase risk for Coronary Heart Disease (CHD)
Eggs are also high in cholesterol and can increase the risk for developing coronary heart disease (CHD).
Many people and children are allergic to eggs. It is very difficult for people with egg allergies to avoid foods containing eggs, as eggs are added for binding and leavening to so many different kinds of foods. Not only is it hard to avoid foods that contain eggs, but some vaccines like the flu shot use live or weakened viruses that are grown on an egg-based culture.
Eggs used for Binding and Leavening
Eggs are mainly popular as a means for binding or as a leavening agent for foods and are added to cakes, cookies, breads, ground meat, schnitzels, stuffed vegetables and more. Potato flour is a great binding substitute for eggs that can be used all year including at Pesach (Passover).
No-Egg Honey Cake parve
This recipe is based on my mother’s recipe for honey cake, but with no added sugar or eggs. Honey cakes are very popular around the Jewish holidays of Rosh Hashana (New Year) and Sukkot (Tabernacles). Many traditional holiday dishes have honey as an ingredient because we pray to the LORD our G-D to bless us with a sweet new year. Also, many people break the Yom Kippur fast with a slice of honey cake.
