Many people and children are allergic to eggs. It is very difficult for people with egg allergies to avoid foods containing eggs, as eggs are added for binding and leavening to so many different kinds of foods. This recipe is based on my mother’s recipe for honey cake, but with no added sugar or eggs. Honey cakes are very popular around the Jewish holidays of Rosh Hashana (New Year) and Sukkot (Tabernacles). Many traditional holiday dishes have honey as an ingredient because we pray to the LORD our G-D to bless us with a sweet new year. Also, many people break the Yom Kippur fast with a slice of honey cake.
Ingredients
- ¼ cup extra virgin olive oil
- 1 ½ cups honey
- ¾ cup warm water
- ½ cup potato flour
- 1 teaspoon baking soda
- 1 Tablespoon baking powder
- 2 ½ cups whole spelt or whole wheat flour
- 1 tsp. cinnamon
- ½ teaspoon ginger
- ¼ teaspoon cloves
- ½ cup chopped or ground almonds

Easiest Way is Cake Setting in a Bread Machine
The easiest way is if you have a bread making machine with a cake setting. Simply put all the ingredients in and click on the cake setting.
If you don’t have a bread making machine then do the following:
- Sift together the flour, potato flour, cinnamon, ginger, cloves, baking soda and baking powder.
- Make a well in the center of the sifted dry ingredients and add the warm water, honey and olive oil. Mix well.
- Pour into one large loaf pan or two small loaf pans that have been lined with baking paper or are non-stick.
- Bake at 325o F or 165o C for about 1 hour.
